Its powerful, unforgettable perfume gives a special magic to our Seine Bay Scallop baked with a fine truffle purée, Brittany turbot studded with truffles, artichokes and anchovies, or suckling calf sweetbreads with shallots reduced in yellow wine dusted with poppy seed… and as a dessert, why not go for the cold polenta with truffles served with a quince compote?
